I recently ducked into Chokolá Bean to Bar, the charming little chocolate shop tucked just off the Taos Plaza at 106 Juan Largo Lane, for an afternoon sweet treat — and left completely smitten. This is the kind of place that makes you slow down. They craft their chocolates and desserts in-house from cacao beans, working in small, intentional batches that you can taste in every single bite.

The Visit

Their handcrafted selections are wonderfully unique. On this visit I tried the goat cheese truffle, the matcha caramel, and the lavender caramel, among others. The goat cheese truffle was especially memorable — just a subtle hint of goat cheese in a soft, creamy center, wrapped in a smooth chocolate shell and dusted with cacao powder. It struck the perfect balance: rich without being heavy, interesting without being odd. Even if you think goat cheese and chocolate sounds like an unlikely pairing, trust me on this one.

While I was there, a fresh batch of brown butter brownies came out of the oven. Of course I had to try one. It was heavenly — warm, deeply caramelized, and exactly the kind of simple perfection that makes you close your eyes for a second. If you happen to be there when something fresh comes out of the kitchen, do not hesitate.

Tips & Recommendations

If you're feeling undecided — and the case is absolutely full of temptation — I highly recommend one of their tasting trios. It's an easy way to sample a little of several flavors without committing to a full piece of each. Beyond the chocolates and truffles, they also offer cakes, a chef's selection of ice cream, and coffee, espresso, or tea to pair with whatever you choose. Everything feels carefully made and thoughtfully presented.

What Others Are Saying

My experience lines up with what so many others are saying. Chokolá consistently earns high marks — around 4.7 to 4.8 across major review platforms, and it holds the top spot as the #1 Dessert destination in Taos on TripAdvisor. Reviewers repeatedly call out the exceptional quality of the bean-to-bar chocolate, the creative and well-balanced flavors, the silky mousses, the rich sipping chocolates, and the knowledgeable, friendly staff. The goat cheese truffle gets special mentions even from people who don't usually like goat cheese. The shop itself is frequently described as a little gem — small, welcoming, and clearly run by people who care deeply about the craft.

A few reviewers note that portions are rich rather than large — which is exactly right. This is not the place for a giant dessert; it's the place for something small and exceptional. The Aztec sipping chocolate and the white chocolate mousse are mentioned constantly in reviews, and the French sipping chocolate has been compared to the famous hot chocolate at Angelina's in Paris. High praise, and from what I tasted, not undeserved.

Practical Notes

Chokolá is open Monday through Friday 11 a.m. to 6 p.m., Saturday 10 a.m. to 6 p.m., and Sunday 11 a.m. to 6 p.m. Phone: (575) 779-5925. Website: chokolabeantobar.com. Located at 106 Juan Largo Lane, Suite B — between Taos Plaza and the entrance to the John Dunn Shops. Easy to find once you know it's there, and worth seeking out if you don't.

If you're in Taos and have even a mild love of chocolate, make time for Chokolá. It's the kind of place that turns a simple afternoon sweet into a memorable little experience. The goat cheese truffle alone is worth the stop.
